Sunflower oil vs rapeseed oil

The short version: neither oil is a health food, but rapeseed oil has a better fatty-acid profile for most people, while sunflower oil is more prone to oxidation and may increase cardiovascular risk markers.

The evidence here is thin and mostly from animal or short-term human studies. A 2002 crossover trial in 18 healthy young men compared diets rich in olive, rapeseed, or sunflower oil [2]. Sunflower oil increased the oxidation susceptibility of VLDL lipoproteins compared to both olive and rapeseed oil. That matters because oxidized lipoproteins are more atherogenic — they damage blood vessels more easily. The same study found that rapeseed oil produced intermediate effects between olive and sunflower on postprandial lipids.

A 2005 study in hypertensive patients on medication compared sunflower, sesame, and groundnut oils [3]. Sunflower oil did not lower blood pressure beyond the drug alone, while sesame oil did. Sunflower oil also produced higher markers of oxidative stress (TBARS) than sesame. This is not a direct rapeseed comparison, but it adds to the picture that sunflower oil does not help with oxidative control.

The animal data is consistent. A 1994 study in miniature swine fed sunflower oil for 50 weeks showed a large increase in total cholesterol (from 41 to 102 mg/dL) and LDL (from 16 to 61 mg/dL) [4]. The olive oil group, by contrast, saw total cholesterol drop over the same period. A 1986 rat study found that sunflower oil (high in linoleic acid) modestly attenuated hypertension development, but evening primrose oil was more effective [1]. The rat data suggests sunflower oil is not harmful for blood pressure, but not optimal either.

The key difference between these oils is their fatty-acid composition. Sunflower oil is very high in omega-6 linoleic acid (about 60-70%) and low in omega-3. Rapeseed oil has a better balance: about 60% monounsaturated oleic acid, 20% linoleic, and 9% alpha-linolenic acid (an omega-3). The high omega-6 content of sunflower oil, especially in a modern diet already overloaded with omega-6, can promote a pro-inflammatory state. The high polyunsaturated fat content also makes sunflower oil more vulnerable to oxidation during cooking or storage, creating oxidized lipids that enter the bloodstream.

Neither oil is dangerous in normal use. But if you are choosing one for daily cooking, rapeseed oil is the better bet. It is more stable at heat, has a better omega-6 to omega-3 ratio, and the limited human data shows it does not increase lipoprotein oxidation the way sunflower oil does. The evidence here is not strong enough to say either oil causes disease, but it is strong enough to say sunflower oil has measurable disadvantages in markers that predict cardiovascular risk.

My call: rapeseed oil is preferable to sunflower oil for regular cooking, based on fatty-acid profile and lower oxidation risk. Confidence: moderate — the human data is limited to small short-term trials, and no long-term outcome studies comparing these oils exist in the evidence here.
