Can you eat too much beetroot?
The short version: beetroot is a food, not a drug, and the risks of eating too much are real but come from oxalate and nitrate chemistry, not from toxicity in the usual sense.
The evidence here is almost entirely about beetroot juice as a performance supplement, not about harm from overconsumption. That is a gap worth naming. Fifteen meta-analyses and dozens of trials show that beetroot juice, at doses of about 8 to 16 mmol of nitrate per day, modestly improves exercise endurance and strength in healthy adults [17]. The effects are small: about a 2 to 5 percent reduction in oxygen cost during submaximal exercise [3], and a 2.8 percent improvement in a 4 km time trial [6]. The blood pressure drop is also modest, around 4 to 5 mmHg systolic in acute studies [13]. None of these studies were designed to find harm from high intake, and none report it.
The two real risks come from oxalate and from nitrate itself. Beetroot juice contains 60 to 70 mg of oxalate per 100 ml, mostly soluble and absorbable [15]. For someone prone to calcium oxalate kidney stones, a single glass of concentrated juice delivers a meaningful oxalate load. The second risk is nitrate pharmacokinetics: a single dose of 500 ml beetroot juice (about 16 mmol nitrate) raises plasma nitrite to around 300 nM, a fivefold increase from baseline [2, 4]. That is well within the range the body handles from a high-vegetable meal, but the dose-response curve is not linear. At very high intakes, the nitrate-nitrite-NO pathway can produce methemoglobinemia, especially in infants or people with impaired gut flora or low stomach acid. The evidence here does not test that threshold, but the mechanism is established outside this retrieval.

My call: for a healthy adult, eating beetroot as a vegetable or drinking a glass of juice daily carries low risk. The danger is not from beetroot itself but from concentrated juice in people with kidney stone history, infants, or anyone on blood pressure medication where an unmonitored drop could matter. The evidence does not define a "too much" number because nobody has run the dose-escalation safety trial. Confidence: moderate.
