What’s the evidence for harm from very high beetroot intake, not just juice doses?
The short version: the evidence does not define a "too much" number for whole beetroot, because no study has tested harm from high whole-beetroot intake in humans.
The retrieval here is almost entirely off-topic. Of the 37 records, most are about hyperkalemia from drugs, dialysis, or tumor lysis [1–15], about kidney stone risk factors in general [16–27], about nitrate in sausage processing [28], about river sediment [29], about algae [31], about prairie soil [32], about phytoplankton [33], and about wetland denitrification [36]. None of these test harm from eating whole beetroot at high doses.
The only records that touch beetroot directly are about beetroot powder as a nitrite source in sausages [28] and about beetroot juice pharmacokinetics in a single-dose study of 11 healthy adults [34]. That study gave 250 ml of beetroot juice containing 572 mg of nitrate and measured plasma nitrate and nitrite for 6 hours. It found a rise in plasma nitrite and a small drop in mean arterial pressure at 4 hours [34]. It did not test harm, did not test repeated high intake, and did not test whole beetroot.
The previous answer's analysis of oxalate and nitrate risks still applies, but it was based on the juice literature, not on whole-beetroot studies. Whole beetroot has the same oxalate and nitrate chemistry as juice, but the dose per serving is lower because the water and fiber dilute the concentration. A typical whole beetroot has about 2 to 3 mmol of nitrate, compared to 8 to 16 mmol in a concentrated juice dose. The oxalate content is also lower per gram of whole vegetable than per ml of juice.
My call: the evidence does not answer the question. No study has tested harm from high whole-beetroot intake in humans. The risks are theoretical, based on oxalate and nitrate chemistry, and are lower for whole beetroot than for concentrated juice. Confidence: low, because the question has not been studied.
